It’s simple – I love Fall. There was a time when I would have said that Fall was not one of my favorite seasons but that has changed as I’ve gotten older. I know it isn’t quite here yet but I’m getting ready- house decor, sweaters, and even the pumpkins! Why do I love Fall? Well, it is all about the cozy sweaters, jeans, boots, the changing colors, holidays, and the crispness in the air. I also love the food and all of the comfort that comes along with it- soups, casseroles, crockpot dinners, hearty hot meals, crisp apples, hot tea, and of course pumpkin spice everything! Not to mention it just goes with my farmhouse lifestyle!
Today I am going to share one of my Fall favorites with you – it is so easy and a dish the entire family will love!
Cheesy Potato & Hamburger Soup
1 pound ground beef
1 medium onion, finely chopped
2 cloves minced garlic
6-8 medium potatoes, peeled and cubed
2 carrots, peeled and chopped
2 teaspoon basil
1 teaspoon parsley
4 cups chicken broth
2 cups of milk
1/3 cup shredded sharp cheddar cheese
1/2 cup shredded Parmesan cheese
Salt and pepper to taste
Directions: In a medium-size pot, combine the ground beef, onion, garlic, and cook until the meat is browned. Drain the excess grease and then add the potatoes, carrots, basil, parsley, and broth. Bring ingredients to a boil.
Reduce heat to medium-low and simmer covered for 15-20 minutes or until the vegetables are tender. While the soup is simmering, combine the milk and flour in a blender and blend until smooth. Gradually pour the mixture into the soup, stirring constantly. Cook and stir until the soup is thickened and starting to boil, don’t overcook as the potatoes will become mushy. Add both kinds of cheese and continue cooking until the cheese is melted, about a minute or two. Add salt and pepper to taste. Garnish with additional cheese if desired.
